Date with a cake

A few fortunate ones live the life they have always wanted to. Others feel fortunate with the one they are living.

But very rarely does one get the opportunity to be someone else. I had just such a day when a long-cherished, and rather delicious, dream came true.

Reports and pages took a backseat - I was a chef, and that, too, a pastry chef at the Shangri-La hotel. So, welcome to the world of cakes, pastries, cookies, truffles, mousse and #8230; this is Chef Kundu reporting from the bakery kitchen - live and fresh.

For the first few minutes in the kitchen, I simply inhaled the exquisite aromas. Chef Mohammad Zakir, a man with a very Mughal-era appearance, greeted me in a way that conveyed a message, “Welcome on board, and let’s get to work.

” Without much ado, I was quickly wrapped in an apron with the chef’s hat perched in place. The work at hand was making a chocolate trio cake, apart from helping out with the cookies in the breads section.

By the look of it, the processes behind running a bakery were far more complicated than I could ever imagine. As I started on the cake, I understood I was handling a thing of complexity - three layers of molten chocolate (dark and white), cream, milk, eggs and three different types of temperatures -baking, the final one, being at minus 18 degrees celsius.

Quite something! That cake, however, is a small part of a huge machine - one that churns out a five-star hotel’s daily needs of small mountains of baked goods. The process starts in the morning, after a meeting to discuss what’s on the spread for the day.

Alongside that, the bakery kitchen has to deal with unusual - sometimes almost bizarre - requests from hotel guests. “I remember a foreigner, who wanted a Cinderella-shaped cake that would remind him of his wife,” recalled Chef Zakir.

The hotel also greets honeymooners with special chocolate and pastry boxes - all courtesy the bakery department. In my department at office, I’m the certified ‘cake gorger’.

And after this stint as a chef (my cake was perfect, by the way, and quickly devoured by colleagues), I not only love cakes more, but also know exactly how much effort goes into those creamy layers, right down to the last milligram.

I need some help with cigars please!

i’m the best man in a wedding this weekend and want to get cigars for after the ceremony for all the guys…anyone have any suggestions as to what type are a tasty not to expensive treat for this type of occasion?? We are all in our Mid 20’s if that helps…thanks so much best answer gets 10 points and a cigar for themselves sent to them

 

You cannot go wrong with a Macanudo Portifino. This is a quality Dominican Cigar grown from Cuban Seed. It is sold in a resealable aluminum tube and just says “I have great taste” on every level.

One of you clowns gave me a thumbs down. If you read the question it mentions price concerns….I addressed this answer by factoring in all the talking points. Dont thumbs down me just because you dont happen to agree……and finally, 15 or 30 years of smoking cigars does not an expert make. Read the question again.

A question and some suggestions:

-Do you or the groomsmen currently smoke cigars? If so…go with what they like. Surely this shouldn’t be that hard then.
-If none of you smoke, go with something at the milder end of the scale, as the stronger cigars may be a bit much; plus you may not be able to adequately appreciate the various aromas; a bit of a waste then.
-Without knowing your individual taste preferences, it would be impossible to recommend a specific cigar. Go to a specialty cigar store, and talk with them. They may have some specific recommendations for someone new to smoking a cigar.
-Rather than focus on a brand, get something of good quality that smokes well, have pleasant notes, and is enjoyable.
-While you’re at the store, get a cigar cutter and a proper lighter.
-Macanudo, Punch, Romeo y Julieta all make quality product, although given my location, I just smoke my Cubans and enjoy the good stuff. I just like the flavour.
-The bigger brand names are good quality, but, to an extent, you are paying for the name.

Vegetarians who have cats, if you had to kill to feed your cat would you do so?

I ask this because many of us still do not really understand on a visceral level what truly is in those cans and bags and at what price they came. Packaging can be a mental anaspetic.

The larger moral question this begs is is a cat inherently more valuable than a chicken, cow, fish, etc? Basically an exponential amount of lives are taken simply to care for an animal that is associated with needing meat for survival. How can the lives of many other animals be worth less than a single animal?

This is especially in light that if large enough efforts where taken could theoretical be fed vegan. The products and testimonies are out there. I’m not saying it is easy or cheap but that these other beings also need our love and attention. Nepotism is a danger we all must be aware of.

 

No, I wouldn’t. I don’t live in an area where allowing the cats to feed wild is possible. I’m a bird lover too, and I have lizards in my yard! Another no to your question, is a cat — or dog — worth more than a chicken, cow, sheep, fish, etc.

I’d have serious reservations about switching a pet over to a vegetarian diet at this point, or ever, but in truth it’s not something I’ve ever explored in detail. I’ve always been careful not to impose my own beliefs on others, but then again the environmental and moral consequences of keeping domestic animals is something that will have to be addressed as the world population continues to swell and resource allocations shift.

Sounds like I’ve got some homework to do to get up to speed on this.

I think it’s a very difficult question to answer. I don’t own a cat, but if I did I imagine I would be attached to it and love and care for it. Cats are carnivorous by nature so I don’t think it is fair to force your morals or dietary requirement upon them. I think we can make more ethically informed choices by choosing free range meat or wild caught fish rather than support factory farming and the pet food industry. I just don’t think it is fair to make a naturally carnivorous animal live on an unnatural diet.

I think you’ve raised a very interesting point about the inherent value of two different species. It reminds me of a Tom Regan line of philosophical reasoning. The question of inherent value is complex, can we really say the intrinsic value of a worm is equal to the intrinsic value of say an elephant? I think no matter how much we really want to apply the principle of equality of interests, in practice it’s not always possible. I believe deep down there’s a bit of a speciest in all of us.

Perhaps we should be questioning pet ownership in general. Is it right to even have them in the first place. I think the best thing we can do is try to choose more ethically sourced products rather than force cats on a vegan diet.

But to answer your question, no I don’t think I could kill an animal my self. I do know what goes on in that can of cat food, but I couldn’t do it my self.

why not let the cat go to let it get its own food…almost all cats would…im vegan but wouldnt even consider turning my pets vegan because they are natural carnivors. They wouldnt survive without meat unlike humans who may be natural omnivors but can live on a vegan lifesyle and eat different kinds of things than most animals…Im all for animals and totaly agree with you on the aspect that one life is equal to another but they eat meat naturaly…and i try to do my part by not eating other creatures and taking care of my body and pets…

Hearty and healthy frozen breakfast sandwiches?

My hubby loves having a good breakfast, but i was wondering if I could cook something and freeze it so he can pop it in the microwave when he gets up. But he is into “more healthy” stuff. any suggestions?

 

I used to make salmon cakes and freeze them:

- Canned Salmon, about 2 or 3 cans (you can drain the liquid, take the skin off and leave the bones in, just crush them with a fork, they disintegrate - plus they add loads of calcium… you don’t notice them cause they disappear when you do that - or you can take them out if you’d like but no need to)
- Carmelized onions (dice onions, cook on low heat in pan with a teaspoon of olive oil until carmelized and brown… cooking them faster and on a high heat will only burn them and won’t allow their natural sugars to come out)
- Diced tomatoes
- Bread Crumbs
- Extra Virgin Olive Oil
- Salt
- Pepper

Place salmon from can into a large mixing bowl, carmelize the diced onions (follow carmelization techniques above). When onions are carmelized turn the heat from low to medium high and add the diced tomatoes until sauteed. Turn off heat and add bread crumbs to the pan…. add olive oil, enough to make the mixture moist (about two to three tablespoons - you’ll be cooking a big batch so don’t worry), mix well until mixture is easily moldable when pressed between fingers…. Set the breadcrumb mixture aside until cool… When mixture is cool add to salmon with a little salt and pepper to taste…. Form into small to medium cakes then place in a skillet over medium heat with a little olive oil until outside is slightly browned…. Freeze then take out and warm in oven or microwave.

like invatations, decorations, and favors. It is going to be in a hall surrounded in windows overviewing a lake. Any ideas?

 

Paris Cafe party
Invitations: Send each guest “French visas”– a name tag to hang around their necks
Decorations: Set up a little welcome desk in the hall right outside party room to stamp Eiffel Tower and travel images on their name tags
Decorate the hall with miniature art museum with small printouts of several famous works of arts, such as “Musee de Paris”, “Mona Lisa”, and “Monet Picasso Renoir Kandinsky”
By the welcome desk place French flags held with hot glue.
To create more appealing atmosphere with 3 foot high 3-D Eiffel Tower and place little Paris figurines blue-white-red streamers and the Arc de Triomphe
In the dinning area place white cloths and votive on around tables for a upscale “cafe” feel and arrange the table under a camping gazebo strung with Christmas lights. To add a special touch giving each table Eiffel Tower napkins
Make little temples out of contact paper and use glass etching cream on etch Eiffel Towers on wine glass
Print a menus in French for each table
Favors: send each guest a French style bags filled with “Parfumerie” of various scents, Essential oils,
Eiffel Tower charms bracelet, homemade Tower lollipops

What is/was your favorite limited edition Sonic shake?

My favorite limited edition shake at Sonic is the coconut cream pie shake. It’s topped with whipped cream and graham cracker crumbs. Delicious!!!

How to defrost a Turkey…fast?

Many people make mistakes on this.. leaving a turkey out over night is one of the worst. The best…safest way is:

Immerse the turkey in cold tap water. Check the water frequently to be sure it stays cold. Change the water every 30 minutes until the turkey is thawed. Then place back in the refrigerator.

Cold Water Thawing Times
8 to 12 pounds………..4 to 6 hours
12 to 16 pounds………..6 to 8 hours
16 to 20 pounds………8 to 10 hours
20 to 24 pounds…….10 to 12 hours
Those are just some guesses that I have had experiences with in the past… Be safe.. that is the key.

Put in your sink and run cold water over it( set in sink with cold water) or put in microwave and defrost it. Running hot water over meat to defrost is very unsafe.

Shrimp dish?

SHRIMP CURRY
1 lb. cooked shrimp
1 can condensed mushroom soup
1/4 c. seedless raisins
1 lg. onion, finely chopped
2 tbsp. butter
1/4 each tsp. salt and pepper
2 tsp. curry powder
1/4 c. sour cream
dash of tabasco
lemon juice, to season
Sauté the finely chopped onion and 2 tbsp. butter. When onion has browned, add condensed mushroom soup and curry powder (mixed to paste).
Add shrimp, seedless raisins, and heat thoroughly. Season with salt and pepper.
Stir in sour cream, a few drops of lemon juice, and a dash of tabasco.
Serve over hot rice.
HERBED SHRIMP IN GARLIC BUTTER
3 dozen shrimp, de-veined
1 tablespoon salt
1 teaspoon oregano
1 teaspoon thyme
1/2 cup butter
5 cloves garlic, pressed
1 tablespoon fresh parsley, minced
1/4 lb. sliced mushrooms
1/4 cup butter
6 thin orange slices, for garnishing (optional)
green onions, for garnishing (optional)
Shell and de-vein shrimp, leaving tails on. Place shrimp in small bowl with salt, oregano, thyme.
In a separate bowl, cream together butter, garlic and parsley.
In a small skillet, sauté mushrooms in butter. Brush seasoning mixture lightly from shrimp, allowing some to remain. Divide the shrimp among six individual oven proof baking dishes; top with sautéed mushrooms and drizzle with remaining butter from skillet.
Spoon garlic butter mixture (as desired) on top of mushrooms.
Bake at 375°F. for 12 minutes or until done.
Garnish each serving with a thin orange slice, cut through to the center on one side and arranged in a twist over the shrimp. Top with a curl of green onion, if desired.
6 servings.
BAKED STUFFED SHRIMP
Jumbo shrimp (about 2 lb.) or 4 per serving
1 c. bread crumbs
1/2 c. melted butter
2 tsp. parsley flakes
2 tbsp. grated cheese
1/4 tsp. salt
1/4 tsp. pepper
1 sm. can crabmeat (optional)
White wine or sherry to moisten
Rinse shrimp. Remove shell; leave tail. Cut shrimp partway through and remove vein. Mix all ingredients before stuffing. Lay shrimp spread open; stuff on baking sheet (about 1 tsp. per shrimp). Drizzle with melted butter and bake 20 minutes in 450 degree oven.

Shrimply Delicious Shrimp Salad

INGREDIENTS
1 pound large peeled and deveined cooked shrimp
1 cup chopped celery
1 large carrot, shredded
1/2 cup chopped onion
2 hard-cooked eggs, chopped
3/4 cup mayonnaise
salt and pepper to taste

DIRECTIONS:
In a large bowl, gently toss the shrimp, celery, carrot, onion, eggs, and mayonnaise. Season with salt and pepper. Chill until ready to serve.
